Mochi is a traditional New Year's treat of pounded rice cakes. A special sweet white rice is steamed and pounded by hand or by machine, then formed by hand into snack-sized cakes. This volume explores the back-breaking process from building fire-pits and hand-pounding the rice, to the ease of gas stoves and mechanized pounding.
